At Albergo Miravalle in Fai della Paganella we take particular care with our food. Half board at our hotel stands head and shoulders above the others, since every day we offer all our guests a five course gastronomic adventure, prepared to order to ensure the full authentic savours of real traditional cooking.
We love to innovate and experiment within the bounds of established traditions, preparing seasonal products with expert care. Our first courses are always a delight, and we prepare our homemade pasta in a great variety of ways. The meat and game second courses from our local mountains faithfully reflect the very best our territory can offer.
Dinners always start with a selection of appetizers and the Chef’s soup of the day, a delicately flavoured hot dish, like our wholemeal polenta soup with soft cheese dumplings.
TRADITIONAL HANDMADE BREAKFAST
Our favourite time of day is breakfast with our homemade cakes and pastries. Chef Maurizio’s favourite activity is pastry making and baking.
Every morning you are welcomed with Monica’s warm smile and a breakfast buffet of homemade baking:
- Traditional jam tarts
- Lingonberry jam cakes made with spelt flour, without egg or butter
- Apple or chocolate chip loaf cakes
- Strudel with sponge, custard cream, and apricot jam
Together with local 0 km products, like our own elderberry syrup (depending on the season), fresh fruit, organic apple juice, fresh bread and milk, Alpine farm butter, cheese and yoghurt from the meadows of South Tyrol.
VEGETARIAN COOKING? YES, ON REQUEST
The kitchen at the Albergo Miravalle in Fai della Paganella is managed entirely by Chef Maurizio, who deals personally with the shopping, menus, and preparing ingredients to ensure everything is fresh and ready right down to the last evening service.
The authentic handmade catering is managed directly by our family and we like to define ourselves as a small traditional hotel. As a result you need to tell us when booking of any variations, intolerances, or special requests so that we can organize the cooking according to our standards:
- All dishes on the menu are prepared to order by our Chef Maurizio
- We use local seasonal ingredients

We include dishes and savours dedicated to vegetarians, like our Daria, without compromising flavour and tradition. We also offer vegan dishes on request.
